Tasting Notes
The striking deep straw colour is alluring. The bouquet is quite fine with ripe, raisin, citrus and lime fruit characters and lifted spirit. The citrus fruit and lime flavours on the palate are accompanied by notes of quince and apple. The texture reflects the balance of the wine with the lingering flavours, sweetness and alcohol in harmony. Overall, a wonderful example of a unique fortified style with complexity of fruit, luscious generosity and a nice interplay of alcohol spirit through the palate. A vibrant straw colour with a slight green tinge, good clarity and brightness.
Will Shields’ Winemaking Notes
It is made from carefully handled Riesling and Chardonnay grapes. The juice is fermented in old oak barrels before being fortified with our own special blend of brandy and neutral grape spirits. The wine is allowed to mature on yeast lees for ten months. This adds complexity and richness to the wine. It is an intensely flavoursome wine that is best enjoyed slightly chilled, with fruit or ice cream or just on the rocks.
